Tim Mortimer went down a number of blind alleys trying to find the best way to gain an economic foothold in the wine industry. After seven years of experimentation, he decided to focus on riesling from the Great Southern and elsewhere in South West Australia, infilling with red wines from SA headed by Nebbiolo and Shiraz. One unique wine for his virtual winery (which owns neither vineyards nor a winery) is Nebbiolo Moscato - a thoroughly lateral idea. -JAMES HALLIDAY
