With a softer palate weight, this gin hyper-focuses on its leading botanicals. Despite taking a few moments to come through, the black lime is wielded with precision. Playing into both the floral nature and the intense depth of the ingredient, it oscillates between extremes, creating an almost bittersweet finish to the spirit. The nose, deceptively, hides this intensity and lures you in with a subtle barley candy note and snippets of warm cinnamon baking spices. A singularly interesting gin, full of contrast and a gentleness that belies the alcohol content and plays surprisingly light-footed. Mixing with soda helps to bring more clarity and even out the palate.
