Located in Hindmarsh on South Australia’s gorgeous Fleurieu Peninsula, Lost Phoenix produces a range of uncommonly creative products like pancetta peated whisky and barrel-aged apple gin. Its approach is to bring together 'the best of the culinary world with the world of small batch spirits' by including culinary ingredients in its distilled products. That culinary approach follows, as Lost Phoenix shares its site with a wedding venue and restaurant, Lost Phoenix Farms, with a delicious-sounding menu of seasonal dishes. Lost Phoenix is also a sub-brand of young whisky producer Cut Hill Distillery, which has, to date, only released a handful of limited-edition whiskies. Like many of Australia’s small-scale spirits producers, the cellar door experience as part of a trip through the Fleurieu is the biggest draw card, but that’s not to say these spirits don’t have something unique to offer the ever-growing pantheon of Australian-distilled products. -FRED SIGGINS
