Hellyers Road Distillery American Oak Cask Strength Whisky
Only three distilleries in Australia have whisky of this age on hand: Lark, Sullivans Cove and Hellyers. Yes, the price is staggering, but what you’re paying for here is a piece of Australian whisky history, and this is still $1,000 cheaper than the Lark and Sullivans releases of 20 years plus to date. Although the spirit going into this cask would have been rough around the edges, this whisky proves that time can heal some wounds. Subtle and sweet on the nose without a hint of aggressive oak or alcohol, honey on crumpets and blackcurrant jam play with beautifully integrated oak, and you’d never guess this is 55%. There’s some heat on the palate, which you would expect at this strength, but then boom! Waves of vanilla cream and buttery pound cake that linger for days.
