Sullivans Cove Old and Rare French Oak Refill Cask Whisky

This whisky hails from the Sullivans Cove “Old & Rare” series, distinguished by the wooden presentation box and is reserved for whiskies matured for at least 16 years. This one comes from a single ex-tawny cask that was already used once by the distillery, then refilled. Here, we have a whisky that’s been allowed to develop in an environment where time, rather than oak, does most of the talking. The nose is subtle, as is often the case with whiskies of this age, and the oak has not overpowered the spirit. We’re not looking for boldness here, but refinement and complexity, and the roasted chestnut, softwood polish, and apricot preserve emanating from the glass says we’ve found it. Custard and baked apple texture and flavour play out on the palate with light oak and perfect integration. This is a whisky of wonderful quality and nuance.
