Spring Bay Distillery Bourbon Cask No. 322 Tasmanian Single Malt Whisky
Spring Bay Bourbon Cask is one of the primary examples in Tasmania of how quality ex-bourbon casks combined with good, clean, single malt spirit can really shine in the Australian context. This is bursting with bright, floral fruitiness. There are notes of honeydew, geranium and tinned peaches in abundance, with plenty of bright vanilla from American oak. If you’re looking for buttery biscuits and rich malt character, this isn’t going to tick that box, but that light, floral character has a lot in common with Irish and Japanese whiskies. There’s good texture and grip through the palate, which retains its inherent lightness, making this an extremely drinkable single malt whisky, if not the world’s most complex. But if you like lighter, dryer and more floral whiskies (Glenkinchie, for example) that retain the essential heft of single malt, this will do the trick.
