Marcell Kustos’ approach to winemaking is not limited by conventional methods, rather the aim is to ‘explore and challenge flavours’. A philosophy he hopes results in purity of site expression, for both the Adelaide Hills and McLaren Vale, the regions his limited run of wines are produced from. There is a focus on minimal intervention in the winery, unfined, unfiltered and perhaps unrestrained, in the best sense. LVDO, pronounced ‘lew-do’, comes from the Latin meaning ‘to play, challenge, or explore’. Apt. -MIKE BENNIE
